We use local fish in all of our sushi! This means our fish are landed in Massachusetts and up/down the East Coast as we follow the seasonal migrations. This is not the industry standard- imported fish is heavily used in most sushi kitchens.
Our relationships with local fishermen allows us to preserve complete chain of custody for most fish. We unload the fishing boats ourselves using our drivers and trucks. The fish arrives at our Boston Fish Pier headquarters and is meticulously cut and processed for onsite. No middle men here
